Chicago is known as the packaged foods capital of the world. Time to add micro-green capital to the list! Carl Schurz High School’s Food Science Lab is changing not only what foods its students eat, but also adds transparency to how the foods are grown and their source. Twice a week students come to the lab to do everything from testing the pH balance of the water to laying out burlap to grow more micro-greens. The greens are harvested every week and used in the cafeteria almost daily and of course this advanced hydroponics and aquaponics mini-farms are also growing arugula and kale.

Upton's Naturals Carnitas Jackfruit Chili Lime is a HIT!
While at first glance this may look like marinated chicken - it is anything but. It's Jackfruit! Loaded with spices and flavor. Jackfruit is sweet and fruity, and typically has a strong aroma, which is offset by this recipe. Zero fat and high in dietary fiber. Watch my full review.

What Would You Pay More for at a Grocerant?: A new report from New York University’s chair of nutrition and food studies Krishnendu Ray found that what we are willing to pay for certain cuisines is an indicator of just how we think about race, class, and ethnicity.

Ray analyzed data from Zagat and finds that Americans have been willing to shell out more for French food than just about any other cuisine since at least 1984. It also shows we expect to pay less for Chinese, Thai, and Vietnamese cuisine.

Enriched or Fortified? What’s the Difference?: Ever wonder how certain foods have close to 100% of the daily value of some vitamins and minerals? Is it naturally occurring? Well, a variety of food products are fortified or enriched with vitamins and minerals. Historically, food fortification, such as iodized salt, folic acid in wheat, or vitamin D-fortified milk, served as a public health measure to address population-wide nutrient deficiencies. Today, there are also calcium and vitamin D fortified juices, breads fortified with omega-3s, and vegetable oil spreads with plant sterols.

What does fortification actually mean and what do you need to know? Read on to find out.
